The Epic Brunch Board

My in-laws are coming to visit us this Easter and this year I decided to prepare a brunch board to enjoy at home. This spread is not only tasty and easy to prepare, but it will definitely be the focus of your dining table. Most ingredients are store bought and the ones that require cooking can be prepared ahead of time. There is not an exact recipe to follow, but I am going to list the main items that should be included separately. The rest is optional and feel free to add more to make it your own.  I absolutely love this Epic Brunch Board and I hope you will love your own version too!

First, the Epic Brunch Board main ingredients:

  • smoked salmon with lemon wedges and cream cheese
  • bagels and naan
  • roasted potatoes with crispy bacon
  • cherry tomatoes with burrata cheese
  • eggs: boiled and scrambled

These are the core ingredients that I think you should include and will make up most of the board. Additional items should be fresh fruits, vegetables, herbs, jellies/honey and customize it with what your family, friend, guests love. My favorites are cucumber, avocado, radishes, basil, chives and lots of berries.

This board is easy to prepare in a sense where you can do a lot of prep work ahead of time. I recommend to prepare your veggies, herbs and fruits the night before and also boil the eggs. You can save time by setting out your board, utensils and putting honey, jams, spreads into little bowls also.

Ingredients of the Epic Brunch Board

For the Bacon and Potatoes:

Potatoes can be roasted the night before then reheated or allow yourself a couple of hours before serving time.

  • salt and pepper
  • 2 tablespoons extra virgin olive oil
  • 2 spoons smoked paprika
  • 8 slices thick cut bacon
  • 2 pounds baby potatoes

For the Board:

  • 1 pound smoked bacon
  • 6-12 eggs, cooked to your liking
  • radishes, red onion and cucumber, all thinly sliced
  • pitted green olives and or capers
  • 8 ounce burrata cheese
  • 2 cups cherry tomatoes halved
  • fresh fruit (I used berries), lemons and avocados
  • fresh chives, mint, basil freshly chopped
  • carbs: assorted bagels, naan or bread toasted
  • assorted cream cheese
  • honey and fruit jams

Instructions

1. Preheat the oven to 450 degrees Fahrenheit to make the potatoes.
Toss paprika, potatoes, olive oil and a pinch of salt and pepper together on a large baking sheet and lay the bacon flat over the potatoes. Place baking sheet in the oven for 20 minutes, toss and continue roasting them for 20-25 minutes, or until golden and the bacon crisp. Bacon might cook faster so be sure to remove them if they are crispy before the potatoes are ready.

Once ready drain grease and transfer potatoes and bacon into a bowl.

2. It is time to assemble your Epic Brunch Board. Arrange the eggs,  tomatoes with burrata, potatoes, bacon, smoked salmon, and eggs on a large serving board. Fill in the gaps with herbs, fruits and rest of ingredients to your liking.
